- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- In a bowl, combine the cake mix, oil and eggs and stir together.
- Place the mix in the refrigerator for 15 minutes to make it easier to scoop.
- Scoop the mix into about 1 inch balls and place onto the parchment paper.
- Bake the strawberry cookies for 9-11 minutes, until cookies are set and before they turn brown.
- Cool the cookies on a cooling rack.
- Once the strawberry cookies are cooled, melt the chocolate chips in a microwave-safe bowl, for 30 seconds at a time, stirring in between.
- Once the chocolate is melted and smooth, dip half of the cooled cookies into the chocolate and place on wax paper.
- If you chose to use both semi-sweet and white chocolate chips, dip half of the cookies in semi-sweet chocolate and the other half in white chocolate.
- Add sprinkles or any festive decorations to the cookies before allowing the chocolate to cool and set.
