Rainier Cherry Relish:- In a medium saute pan, combine 2 tbsp oil and chopped garlic. Cook for 2 minutes, or until garlic is fragrant.
- Add in chopped Rainier cherries, allowing it to saute for a minute or two and then remove from heat.
- Transfer cherry relish to a bowl and add in vinegar, parsley and basil. Allow it to cool for ten minutes. Add salt and pepper as needed.
Pan Seared Salmon:
- Preheat a skillet over medium heat for a few minutes.
- Add enough oil to the skillet to coat the bottom (2 tbsp).
- Season the skin of the fish with salt and then lay the fish down in the sizzling pan, skin side down.
- Cook skin side down for about 5 minutes.
- Salt the top of the fish before flipping it over to cook for 30 seconds more.
- Remove from heat and top with cherry relish.
- Enjoy!
