Preparation
1. Remove bottom and outer leaves of cauliflower. Clean and cut cauliflower into small pieces.
2. Bring stock to a boil and add cauliflower. Boil for 7 minutes, or until tender. Drain well, reserving ½ cup of liquid.
3. In a bowl with an immersion blender, or in a food processor, puree the cooked cauliflower, garlic, parmesan and half-and-half until smooth. Use the reserved cooking stock to create desired consistency. Add salt and pepper to taste and serve immediately.
