- Preheat oven to 350 degrees
- Line a baking sheet with parchment paper
- Mix together the ranch packet and panko crumbs on a plate
- Crack and whisk egg in a bowl
- Submerge chicken in egg to cook evenly
- Dredge chicken in panko mixture
- Place chicken on parchment paper and bake for 25 minutes
- In 4 separate bowls, divide the arugula
- Dice the chicken and layer on top and squeeze on fresh lemon juice
