Step 1

Heat a skillet to medium and spray with non-stick cooking spray. Cook black beans in skillet until hot. Divide between 2 bowls and wipe out skillet.

Step 2

Return to heat and scramble eggs. Spoon scrambled eggs over black beans.

Step 3

Spray pan with non-stick spray, and add cherry tomatoes. Stir occasionally, so the tomatoes char and burst (about 5 minutes).

Step 4

Pour tomatoes on eggs, add crumbled feta and freshly scooped avocado. Sprinkle with sea salt, if desired.
