1. Combine chicken, water, and 1 teaspoon salt in a large saucepan and bring to a boil; cover reduce heat, and simmer for 45 minutes. Drain, reserving broth for other uses.
2. Cut chicken into bite-size pieces. Combine chicken, apple, celery, and almonds in a large bowl; set aside.
3. Combine yogurt, mayonnaise, honey, lemon juice, 1/4 teaspoon salt, and white pepper in a small bowl, stir well. Add to chicken mixture and toss well. Cover and chill. Serve on lettuce leaves, if desired.
