  1. Preheat oven to 425 degrees F. Grease a rimmed baking sheet with cooking spray and set aside.

  2. Place prepared carrots in a large mixing bowl, set aside

  3. Melt butter in the microwave. Add minced garlic, Italian seasoning, salt and pepper to melted butter and whisk until thoroughly combined.

  4. Pour butter mixture over the carrots and toss to coat. Add parmesan cheese and toss until combined.

  5. Transfer carrots to baking sheet and bake for 20 – 25 minutes or until tender, making sure to mix around half way through baking.

  6. Remove from oven and sprinkle with fresh parsley and serve.
