- Preheat oven to 400 degrees Fahrenheit.
- In a bowl, combine graham cracker crumbs, melted butter and 1 tbsp sugar.
- Press mixture firmly into the bottom of a springform pan,
- Bake in the oven for roughly five minutes, until golden brown.
- While baking, in another bowl, combine cream cheese, 3/4 cup sugar, flour, vanilla extract and heavy cream.
- Mix with an electric mixer on low until blended.
- Slowly add in eggs, one at a time, beating with the mixer in between.
- Once crust is golden, pour mixture into springform pan and bake (still at 400 degrees Fahrenheit) for 10 minutes.
- After that time, reduce temp to 300 degrees Fahrenheit and bake for 30-40 more minutes.
- Remove cheesecake from oven and run a knife along the side of the pan to loosen the cheesecake.
- Place in the fridge for a few hours and top with cherry pie filling or fresh cherries.
