  1. Preheat oven to 400 degrees Fahrenheit. 
  2. In a bowl, combine graham cracker crumbs, melted butter and 1 tbsp sugar. 
  3. Press mixture firmly into the bottom of a springform pan,
  4. Bake in the oven for roughly five minutes, until golden brown.
  5. While baking, in another bowl, combine cream cheese, 3/4 cup sugar, flour, vanilla extract and heavy cream. 
  6. Mix with an electric mixer on low until blended. 
  7. Slowly add in eggs, one at a time, beating with the mixer in between. 
  8. Once crust is golden, pour mixture into springform pan and bake (still at 400 degrees Fahrenheit) for 10 minutes.
  9. After that time, reduce temp to 300 degrees Fahrenheit and bake for 30-40 more minutes.
  10. Remove cheesecake from oven and run a knife along the side of the pan to loosen the cheesecake. 
  11. Place in the fridge for a few hours and top with cherry pie filling or fresh cherries.
