1. Line a 9"x12" glass baking dish with plastic wrap.
2. Place 12 (2 piece) graham cracker squares flat on the plastic wrap covering the space inside the bottom of the dish.
3. Set your oven to the broil setting. Line an oven safe tray with foil, and place the mini marshmallows on the foil in the tray. Place the tray in the oven for around 30 seconds while watching them carefully, and remove promptly when they have just slightly browned on the tops. Do not burn.
4. Scoop 4 cups of slightly softened Mayfield Homemade Vanilla flavor ice cream and place into a large mixing bowl. Add the chocolate chips and toasted mini marshmallows.
5. Stir well with a large spoon until marshmallows and chocolate chips are evenly dispersed throughout the ice cream.
6. Spread the ice cream/marshmallow/chocolate chip mixture over the top of the graham crackers in the glass dish. Smooth the mixture evenly across with the help of a spatula or spoon.
7. Top the mixture with another layer of 12 (2 piece) graham cracker squares to create the top of sandwiches.
8. Place the glass dish in the freezer and let them set for at least 3 to 4 hours.
9. After the mixture is completely frozen, remove the dish from the freezer. Pick the mixture up using only the plastic wrap and flip them over back into the glass dish so you can remove the plastic wrap.
10. Use a knife to cut the mixture into individual squares around the sides of the graham crackers. Serve immediately!
